Mom's Barbeque Ham




Prior to Christmas quite a few of my readers wanted me to post my mother's Barbeque Sauce recipe.  This was on my YouTube channel.  Its not something which really requires a lot of time.  Making the sauce that is.  It goes together in literally minutes.



The time is taken up by braising whatever it is that you wish to use it on.  That can take up to three hours depending.

Mom used to work in Construction Engineering on the base here in Greenwood.  She worked there for over 25 years.  The girls in the office often exchanged recipes. This was a recipe that mom had gotten from one of the other girls.



Its just a simple sauce which only requires you to stir together a few simple store cupboard ingredients. It goes together lickety split!


Once you have it stirred together you pour it over your chosen protein in a casserole dish, cover and then braise everything together in a slow oven.

Mom always used it with leftover baked ham. She would cut the ham into bite sized pieces and then pour the sauce over and bake.  I have done the same today with the ham leftover from New Years dinner.


It is also really delicious poured over chicken pieces, pork spare ribs, leftover roast pork, beef meatballs, etc. 


There are no vegetables in the sauce, but mom always added diced onion and celery. I did the same today as well as adding some crushed pineapple.  You can add diced peppers, any color as well. It is really one of those bare bone types of sauces that you can use and adapt to truly make them your own.

WHAT YOU NEED TO MAKE MOM'S BARBEQUE SAUCE

I am betting you have just about everything you need to make this simple sauce in your kitchen right now!


  • 1 cup (225g) tomato ketchup
  • 2 cups (450ml) water (I usually only use 1 1/2 cups/360ml)
  • 1/4 cup (60ml) apple cider vinegar
  • 1/4 cup (60ml) Worcestershire Sauce
  • 1/4 cup, packed (50g) soft light brown sugar
  • 1 tsp celery seed
  • 1/2 tsp chili powder
  • 1 tsp salt
  • few drops Tabasco Sauce

I don't quite use all of the water required as I like my sauce to be a bit thicker.  I use an organic apple cider vinegar and of course Lea and Perrins Worcestershire sauce.



Don't stint on the brown sugar. You might want to taste the sauce and if you think it needs a bit more by all means add a bit more.



The celery seed adds a nice celery taste. The chili powder is of the milder North American variety. If you are in the U.K.and are using the chili powder from there I would cut the amount down quite a bit as the chili powder there is very firey!

 

Because I was going to be cooking diced ham leftover from New Years in this on this occasion, I did not add any salt. Play it by ear. If your protein is salty, leave out the salt.  I also added some crushed pineapple, chopped onion and chopped fresh celery.

HOW TO MAKE MOM'S BARBEQUE SAUCE


This is really a bit of a doddle. It doesn't take much time to stir everything together. The time comes when you braise whatever it is you are going to cook in the sauce.  It's worth the wait.  Trust me on this.



Preheat the oven to 325*F/160*C/ gas mark 3.



Whisk together all of the sauce ingredients until well blended together.



Put your desired protein into a baking dish and pour the sauce ingredients over top. Cover tightly.



Oven braise for 2 1/2 to 3 hours until everything is tender, and the sauce has thickened. You can uncover the baking dish for the last 15 to 20 minutes to brown things a bit.

MOM'S NOTES:

I add some soy sauce, chopped or minced onion, chopped celery and a bit of oregano

You can also add a can of drained pineapple chunks.


On this day I added the other half of the can of crushed pineapple I had used in the Sweet Pineapple Baked Beans from the other day, along with the chopped onion and celery.

The smell of this baking took me right back to those Sundays when, as a family, my ex, our children and I would go to my mother's home for Sunday Dinner.  She often made this with ham after having cooked a ham dinner. 



She would chop up the ham in a small dice and add it to the sauce.  She served rice with it, always minute rice that she would have added celery and onion, and yes, oregano (her favorite herb) to.  We loved it.



I enjoyed mine on this day with brown rice and steamed broccoli.

Here are a few other simple sauces that I really like to make.  Neither of them are difficult to execute and they are both exceptionally delicious! 



BUTTER ROASTED TOMATO SAUCE -  This is quite simply one of my favorite pasta sauces. It is totally low maintenance and basically cooks itself.  All you need to do is to dump a few ingredients into a baking dish and then let the oven do all the work.  Simple ingredients put together in the most delicious way!


SWEET AND SOUR PEANUT SAUCEThis is a wonderful mix of flavours and textures . . .  sweet, tangy, creamy, spicy, rich and sour.  In short perfect! You can spoon this over chicken, pork or fish, or use it as a tasty dipping sauce!
