BBQ Chicken Packets

I was in the mood for something quick and easy the other night and so I threw together these delicious foil packets, BBQ Chicken Packets.  So simple to make and so tasty when done!  You can either cook them in the oven or on the BBQ.  Its all up to you!

Foil packet meals are so very easy to make.  You just simply bung everything into a foil packet and then grill or bake.   Everything cooks together and there is hardly any clean up afterwards.

One for each person and each person can cook their own.   The other day I used a mix of sweet and white potatoes  . . .  and onions, with some herbs and seasonings as the bed.

I seasoned chicken breasts lightly and then wrapped them in some bacon and laid them on top of the potatoes.  Then I drizzled some BBQ sauce over top.  I used the Newman's Own Sticky BBQ Sauce.  It's not too spicy and goes well with chicken.

I sprinkled Blue Cheese on top because we like Blue Cheese, but any kind of cheese would do.   Jack, cheddar, swiss.  All would be good.   You fold the foil over to cover and then cook, with the end  result being very delicious indeed.  And it was so simple.  ☺  A salad on the side and Bob's Your Uncle . . .  Dinner is served!

*BBQ Chicken Packets*
Serves 4

A delicious week night supper.  Simply wrap up in a foil packet and throw them on the BBQ or in the oven.  Dinner is served and it's not only delicious, but there is very little cleanup involved!  I'm all for that! 

4 medium sized boneless, skinless chicken breasts
8 slices of streaky bacon, partially cooked
1 tsp olive oil
2 medium baking potatoes, peeled and chopped
2 medium sweet potatoes, peeled and chopped
1 medium onion, peeled and chopped
salt and  black pepper
paprika
garlic powder
1/2 TBS parsley flakes
your favourite BBQ sauce (I used Newman's Own sticky)
4 TBS crumbled blue cheese

Place the potatoes, onions, salt and black pepper to taste, olive oil, garlic powder and paprika to taste and parsley flakes in a bowl.  Toss to coat.


Lay out 4 large sheets of heavy weight aluminum foil.  If you don't have heavy foil, use two sheets for each packet.  Place one fourth of the potato mixture in the centre of the packet.   Season the chicken breasts lightly with salt and pepper.  Wrap two slices of bacon around each.  Place on top of the foil.  Drizzle with some BBQ sauce, about 2 TBS on each. Scatter the top of each with 1 TBS of cheese.  Bring the foil up to enclose the chicken and potatoes completely, taking care not to touch the top of the chicken or cheese.  Leave space for air to circulate.

Place the foil packets in a heated BBQ or oven heated to 180*C/350*F/ gas mark 4.  Cook for 45 minutes, until the potatoes are tender and the chicken cooked through.


Unwrap the foil packets and serve.

    Seriously, what a great idea as you can tailor the packets to suit everyone's tastes. This will be one to try as summer rolls on.
