As I have reiterated on numerous occasions, the potato is my most favorite of all vegetables. A day without a potato in it in some way, shape or form is just not a day worth living!
I could make a meal of just potatoes and nothing else and sometimes do. They are the one food I just could not live without. Now you know why low carbing does not work for me. I just cannot give up my potatoes!
They have to be one of THE most versatile of ingredients. There is just a proliferation of things that you can do with them. It's practically endless. You can even turn them into a source of power in a pinch with a few nails and a bit of wire. Seriously. Check it out here.
I'd much rather eat them however and one of my favourite ways is to roast them. Did you know you can shake potatoes with a bit of oil, butter and just about anything else . . . roast them and come up with a delicious side dish every time??? It's true!
Today I used a bit of grainy mustard, garlic, lemon, herbs and BACON . . . and ended up with the scrummiest roasted potatoes ever. But don't take my word for that. Try them out for yourself. You will be most happy that you did. I cannot think of anything they would not go with.
*Bacon and Mustard Roasted Potatoes*
Serves 4Roast until crusty and browned, stirring them every 15minutes. Add the bacon, tossing it with the potatoes, during the last 15 minutes of cook time. Cooking altogether could take anywhere from 45 minutes to an hour, or even less, depending on your potatoes. Check them and stir them every ten minutes at the 30 minute mark. Serve hot.
I have to agree with you...I would never last more than one meal on a low carb diet! I love potatoes, doesn't matter how they are fixed.
ReplyDeleteHave a great weekend, Marie.
Nice to know I am not alone in my passion for potatoes Marigene! YOu have a great weekend too! xxoo
ReplyDeleteAnything with bacon..and potatoes:)
ReplyDeleteSorry to nit pick Marie, but do you add the finely sliced bacon with all the other ingredients before cooking the potatoes or do fry them separately and add them to the potatoes once there cooked.
ReplyDeleteThank you Faye
I MUST make these!!! Thanks for the recipe!
ReplyDeleteYears ago, I went on the Atkins diet. Lost a quick 20 lbs. and quit. Hey, did you ever know of an Italian that wouldn't eat pasta? Good grief, it was too much! Haa! I LOVE potatoes also!
Prepared all kinds of ways.
Hope you are feeling better. Glad that your Thanksgiving dinner with the missionaries went so well! What a great send off for the one Sister. You are so kind Marie! xoxo

Hi Faye, no worries. I add it with everything else, which means it's pretty much incinerated by the time the potatoes are cooked, but it has imparted it's lovely flavour into the potatoes. You could of course just add it the last 10 to 15 minutes of cooking time as well, which is probably a better idea now that I think about it! xx
ReplyDeleteThanks Monique!
Thanks Valerie. You and me both! Low carbing it doesn't work for me, at least not longer than on a temporary basis! xxoo
I made these last night and served them alongside cod fillets baked in a cheese & chive sauce with a crispy crumb topping - yum yum yum!
ReplyDeleteEveryone enjoyed these taters and I'm pretty sure they'll be making a re-appearance in the not too distant future.
I can't low carb either ;)
Kia, that sounds gorgeous. I can't think of anything these won't go with. Thank you so much for taking the time to share with us! xx
ReplyDeleteThis sounds and looks delicious, and finely something I don't have to cook the bacon ahead of time.
