Christmas Pudding Sundaes

I was recently sent all of the ingredients to create a delicious Christmas Holiday Dessert from the people at Carte D'Or.  Christmas Pudding Sundaes.  Because of my diabetes, desserts are pretty much off the menu for me, but there is nothing at all to stop the Toddster from enjoying all the desserts he wants.  Life just isn't fair sometimes!

Everything I needed plus the recipe and a voucher to go and buy the ice cream.  Yum!

My photos are not the best and don't really do justice to this dessert.  (I hate the natural light this time of year.)  And not having tasted this myself, I can only tell you what Todd said . . .  "That's really nice!"

Which translated into non man speak means  . . .  "That's flippin' fantastic!"  He is a man of few words is our Todd . . . and if he says something is nice, he means really nice.

Quick, easy, simple to make and tasty.  What more could you ask for in a holiday dessert?  Not a heck of a lot I don't think!

*Christmas Pudding Sundaes*
Serves 4

A delicious holiday dessert which embodies wonderful Christmas flavours.  From the people at Carte D'Or. 

8 scoops of Carte D'Or Vanilla Ice Cream
200g of Christmas pudding (about 1 cup)
100g of cranberry Sauce (about 1/2 cup)
2 TBS mulled wine
2 tsp sugar
2 TBS toasted flaked almonds
1 TBS chocolate shavings

Crumble the Christmas pudding into a small pan.  Place on low heat and warm it thoroughly.
Mix the cranberry sauce, mulled wine and sugar.  Bring to the boil and stir for two minutes to combine and melt the sugar.

Spoon half of the warmed Christmas Pudding into each of 4 tall sundae glasses.  (I used wine glasses) Drizzle with a spoonful of hot cranberry sauce.  Top with a scoop of Care D'Or Vanilla Ice Cream.  Repeat the layers with the remaibig warm Christmas Pudding and hot cranberry sauce.  Finish with a scoop of Carte D'Or Vanilla Ice Cream on top of each glass.  If you have any cranberry sauce left, spoon it over.  Sprinkle with the flaked almonds and chocolate shavings and serve immediately.

  2. This sounds so good! I make a Christmas pudding here in the states that was handed down from my husband's family on Prince Edward Island, Canada. This will be a great way to have some leftovers. Lisa
